Yesterday, it just so happened that I was lucky enough to come across an eye popping recipe "Gluten Free Sweet Potato Brownies" from Lindsay at theleangreenbean (please be sure to check Lindsay out).
I woke up this morning still thinking about those brownies & how much I wanted to bake them with Whistler (my son). You know what happens when you cannot get a thought out of your head....
My son and I opened our pantry to see if we had these ingredients. Well, we didn't have all of them, but we had several of the main ingredients to create our own take on Lindsay's Recipe.
Here's what we came up with - with what we had in the house (perfect because we didn't have to leave on this rainy day!)
INGREDIENTS:
coconut oil (to grease pan)
1 Sweet Potato (steamed)
3/4 Sunflower Butter (any nut butter of your choice will do).
2 eggs
1/2 cup raisins
Chocolate chips (pretty much an empty bag)
1.6 0z Vega One All-In-One Nutritional Shake drink mix (chocolate flavor)
1/2 Tsp Baking soda
Honey (for the drizzle if desired)
Directions:
1. In a food processor (we use the Ninja), blend sweet potato, sunflower butter, and raisins until smooth.
2. Toss in your eggs.
3. Next, add in Vega & baking soda.
4. Lastly, spoon in your chocolate chips & pour mix into your cooking pan (we used a small round pan) not site the size. LOL.
Bake 375° for 15-20 minutes (our brownies took 20 minutes)
(Serving size depends on how many you eat, but supposed to feed 9).
Drizzle buttery sweetness over brownies once ready to serve!!!
